Friday Night Cookout on Saturday Pre-Turkey Day Edition

Here’s my recipe for Easy-Peasy Green Bean Casserole:

8 slices of bacon
2 16 oz. cans of French cut green beans
1 medium onion
1 16 oz can sliced stewed tomatoes
1 can French’s French Fried Onions

You can either chop the bacon and then fry it or fry it then crumble it. Either way get it crispy then remove from the frying pan. Slice up the onion and carmelize in the leftover bacon grease. Remove from heat and drain excess grease.

Mix bacon, onion, green beans and stewed tomatoes in a casserole dish. Bake about 30 minutes at 300 degrees (or less time at higher temperature) and top with French Fried Onions.

Quesadilla Burger

My recipe of the week:

Quesadilla Burgers


o 2 (10 inch) flour tortillas
o Olive oil
o 1/3 cup shredded Monterey jack pepper cheese
o 1/3 cup shredded cheddar cheese
o shredded lettuce
o 1/2 cup diced tomatoes
o 3-4 sliced red onion rings
o 2-4 bacon slices
o southwest seasoned hamburger (recipe follows)

Friday Night Cookout Open Thread

What are your favorite recipes? Here’s one of mine:


5-6 tomatillos

7-8 dried red chiles

1/2 of a medium onion

1/8 bunch of cilantro

Boil the tomatillos until soft and brown the chiles in olive oil in a frying pan.  Toss everything into a blender and puree.  Add water as necessary to achieve the desired consistency.  Apply generously on tacos.

Have at it.
